We really liked this recipe because the burger didn’t “pretend” to be a meat burger (like those soy burgers). It was easy to make and I made a whole bunch to put in the freezer.
This recipe was adapted from All Recipes: Homemade Black Bean Veggie Burgers.
Makes 4 patties.
Time: about 20 minutes
1 (16 oz) can black beans, drained and rinsed and dried
1/2 green bell pepper, cut into 2 inch pieces
1/2 onion, chopped
3 cloves garlic, peeled
1 tablespoon chili powder
1 tablespoon cumin
1 teaspoon homemade hot sauce
1/2 cup bread crumbs (approx, as much needed so the patties aren’t too wet)
I used our Magic Bullet (given to us by my parents) for the first part. Put green pepper, onion, garlic and black bean in a food processor. In a bowl, mix the egg, chili powder, cumin and hot sauce together, then stir into the black bean mixture. Mix in the breadcrumbs, until the mixture holds together enough to make patties. Divide into four patties. I froze the patties before cooking.
Turned out really well.
