In RE-CREATING CORA’S BUCKWHEAT PANCAKES WITH SAUSAGE AND CHEDDAR CHEESE, I tried to imitate Cora’s Buckwheat Blessing. I found the pancakes to be a little thick.
This time, I modified a pancake (German pancake) recipe from my husband’s family and the pancakes were much better.
Buckwheat Pancake Recipe
1/6 cup of buckwheat flour
1/2 cup of all purpose flour
A dash of maple syrup
1 cup of milk
Mix the dry ingredients in a small bowl. Mix the wet ingredients in a measuring cup. Add the dry ingredients to the wet mixture and whisk until no more clumps.
We used a crepe pan to cook the pancakes. Cook the pancakes until both sides are golden brown.
Wrap breakfast sausages with pancakes and top with cheddar cheese.
The result was delicious! Next time, I will make sure the cheese melts more and maybe experiment with adding more buckwheat flour (or a combination of buckwheat flour and another type of flour).
Note: I made 8 breakfast sausages; however, the pancake recipe was a bit more than that, so I had 1-2 pancakes left over (without sausages).
